                         Kheer Recipe:

Ingredients:

  • ½ cup basmati rice
  • 4 cups milk
  • ½ cup sugar
  • ¼ cup mixed nuts (almonds, cashews, pistachios), chopped
  • 1 teaspoon cardamom powder
  • A pinch of saffron strands
  • 1 tablespoon ghee (clarified butter)
  • Raisins for garnish

Instructions:

  1. Wash the basmati rice under cool water until the water runs clear. Drain the rice after 30 minutes of soaking in water.
  2. In an enormous pot, heat the ghee over medium intensity. Add the drained rice and sauté for a couple of minutes until the grains turn slightly golden.
  3. Pour the milk into the saucepan with the rice and bring it to a boil. Stir occasionally to prevent sticking.
  4. Once the milk comes to a boil, reduce the heat to low and simmer the rice and milk mixture. Stir occasionally to ensure the rice cooks evenly.
  5. After 20 minutes, add the sugar, mixed nuts, cardamom powder, and saffron strands to the saucepan. Stir well to incorporate the flavors.
  6. Continue to simmer the Kheer on low heat for an additional 15-20 minutes until the rice is fully cooked and the mixture thickens to a creamy consistency.
  7. Remove the saucepan from heat and let the Kheer cool to room temperature.As it cools, it will thicken even more..
  8. Transfer the Kheer to serving bowls once it has cooled. Garnish with raisins and additional chopped nuts for an elegant touch.

Ingredients:

Sukhi khushk chawal 2 chhoti chammach 

Doodh 1 liter 

Cheeni 1/2 cup

 Badam aur kaju (tukde karke) 

2 chhoti chammach Elaichi powder 

1/2 chammach Kesar (optional) 

thoda sa Chandi ka vark (optional)

Instruction:

  1. Chawal ko dho kar paani mein 30 minutes tak bhigo dein aur fir paani se nikal lein.
  2.  Ek bartan mein doodh garam karein aur usme soaked chawal daal dein.
  3. Chawal aur doodh ko ubalne par aanch halki kar dein aur lagatar chalate rahein taaki doodh na jal jaye.
  4. Chawal gal jaane par cheeni daal dein aur milayein. Iske baad badam aur kaju tukde daal dein.
  5. Doodh ko lagatar pakate rahein aur dheemi aanch par chalate rahein. Kheer garha hone tak pakayein.
  6. Ab elaichi powder aur kesar daal kar milayein. Kesar ke rang aur khushboo ke liye kuch doodh mein kesar bhigo kar rakh sakte hain.
  7. Kheer garha hone par gas band kar dein aur thanda hone ke liye rakh dein.
  8. Jab thanda ho jaye, kheer ko fridge mein thanda kar lein.
  9. Kheer ko serving bowl mein nikalein aur upar se chandi ka vark chadhayein (agar istemal karna chahein).
