Ingredients:
For Dosa Batter:
- 1 cup rice (preferably parboiled)
- 1/4 cup split urad dal from black gram
- 1/4 teaspoon fenugreek seeds
- Salt to taste
- Water for soaking and grinding
For Masala Filling:
- Boiling and mashing three to four medium-sized potatoes
- 1 onion, finely chopped
- 1 green chili, finely chopped
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (optional)
- A few curry leaves
- 2 tablespoons oil
- Salt to taste
For Dosa:
- Dosa batter
- Oil or ghee for cooking
For Serving:
- Coconut chutney
- Sambar (a lentil-based vegetable stew)
Instructions:
Dosa Batter:
- Wash the rice and urad dal separately, and soak them along with fenugreek seeds in water for about 4 to 6 hours.
- Channel the water and drudgery the rice, urad dal, and fenugreek seeds together to shape a smooth hitter. Add water gradually as needed.
- Add salt to taste and mix well. Ferment the batter overnight or for at least 8 to 10 hours.
Masala Filling:
- Let them splutter.
- Add cumin seeds, asafoetida, and curry leaves. Sauté for a few seconds.
- Add chopped onions and green chili. Sauté until the onions turn translucent.
- Add turmeric powder, red chili powder (if using), and salt. Mix well.
- Add the mashed potatoes and mix until all the spices are well combined with the potatoes. Cook for 2 to 3 minutes. Remove from heat.
Making Masala Dosa:
- Heat a dosa tawa or a non-stick pan on medium heat. Sprinkle a few drops of water on the tawa, and if it sizzles, the tawa is ready.
- Take a ladleful of dosa batter and pour it in the center of the tawa.
- Spread the batter in a circular motion with the back of the ladle to make a thin, round dosa.
- Drizzle some oil or ghee around the edges of the dosa and in the center. Cook the dosas until they become golden brown and crispy.
- Spoon some masala filling in the center of the dosa and fold the dosa from both sides to form a roll or a semi-circle.
- Remove from heat and serve hot with coconut chutney and sambar.
