Ingredients:
2 cups blanched, washed fresh spinach leaves
200 grams of cubed paneer (Indian cottage cheese)
1 large onion, finely chopped
2 tomatoes, finely chopped
2 green chillies, slit lengthwise
1 tablespoon ginger-garlic paste
1/2 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon red bean stew powder (change per taste)
1/2 teaspoon garam masala
1/2 teaspoon coriander powder
1/4 cup fresh cream
2 tablespoons ghee or oil
Salt to taste
Instructions:
1. Start by blanching the spinach leaves. Boil water in a pot and add the spinach leaves. The leaves should wilt after about two minutes of cooking. Drain and immediately transfer them to a bowl of ice-cold water to retain the vibrant green colour. Once cooled, blend the spinach leaves into a smooth paste using a blender or food processor. Set aside.
2. In a skillet, heat ghee or oil to a medium temperature. Allow the cumin seeds to splutter when you add them. Then, add the finely chopped onions and sauté until they turn translucent.
3. Slit green chillies and the ginger-garlic paste should be added to the pan. Sauté briefly until the crude smell vanishes.
4. After that, cook the finely chopped tomatoes until they become mushy and soft. Stir occasionally to prevent sticking.
5. Once the tomatoes are cooked, add the turmeric powder, red chilli powder, coriander powder, and salt. Blend completely, and cook for two additional minutes.
6. Mix everything in the pan before adding the spinach puree. Let it simmer for 5-7 minutes on low heat, allowing the flavours to meld together.
7. Meanwhile, heat a separate pan and lightly fry the paneer cubes until they turn golden brown on all sides. Channel them on a paper towel to kill excess oil.
8. Add the fried paneer cubes to the spinach gravy and gently stir to combine. Simmer for an additional 2 minutes.
9. Finally, add the garam masala and fresh cream to the pan. Blend well and cook briefly to permit the flavours to mix.
10. Transfer the Palak Paneer to a serving dish after removing it from the heat. Garnish with a drizzle of fresh cream and a sprinkle of garam masala.
